Kaldi's Gold (Yirgacheffe coffee)

FLAVOR PROFILE

• Flavors: Fragrant jasmine blossom, juicy yellow peach, candied Meyer lemon, and sweet clover honey layered over an Earl Grey black tea base.

• Body: Silky, delicate, and tea-like.

• Aftertaste: Crisp and lingering with sweet bergamot and apricot.

• Pour Over/v60/Chemex: Ratio 1:16, water204°F-206°F

• AeroPress:  Ratio 1:13, water 198°F-200°F Note on using a Keurig with this coffee *You can, but you will blame the coffee for the lack of flavor. The truth is, Keurig machines are fixed to a certain water temp, 192F. This temp is too low to get the best flavor from this coffee and other similar coffee roasts. This coffee is offered in whole beans, not pre-ground. 

Why the name? The legend follows a goat herder named Kaldi, who noticed his flock buzzing with energy after eating wild coffee berries. He shared them with local monks, who initially threw the fruit into the fire, only to fall in love with the rich aroma rising from the embers.
