Why Coffee?

I love coffee. What I didn’t love was inconsistency. The same drink could taste completely different depending on the shop.

Roasting unexpectedly became the heart of it. And roasting teaches discipline. If it’s not right, it doesn’t get sold. It gets tossed.

Every bag has to earn its place.

Do you roast the coffee?

Yes. I roast all of the coffee myself in El Paso, Texas.
I started roasting because I never understood why coffee was often bitter or weak. What I’ve learned is that when coffee is roasted properly, it doesn’t need to be covered up with milk or sugar. My focus is always coffee first.

What makes your coffee different?

My coffee is roasted in small batches with a focus on balance and clarity of flavor. I roast each coffee to highlight its natural character, so it tastes good on its own without relying on heavy sugar or milk. With a background in technology, I leverage AI to optimize roasting.

Is this "coffee snob" coffee?

I focus more on the flavor, body, and how to roast each coffee. There is a lot behind every cup, from the farmers to the way the coffee is processed and roasted, and so much more. Some people enjoy diving into those details, I focus more on making excellent tasting coffee without additional flavorings added to coffee.
